  1. - SKIP THIS STEP IF USING ALREADY DRY-ROASTED PEANUTS - Preheat oven to 165 degrees C. Spread peanuts out in a single layer on a lined baking tray; Make sure they're not too crowded or they may burn. Roast in oven for about 20 mins, or until fragrant and lightly browned. Leave to cool for about 10 mins.
  2. - SKIP THIS STEP IF USING ALREADY DRY-ROASTED PEANUTS - If the peanuts are still in their skins, pick them up in handfuls and roll them between your hands and fingers; The skins should come off easily this way.
  3. Pour the peanuts into a good blender (I used an Omniblend) and pulse about 5 times, or until the peanuts have developed a rough meal-like consistency.
  4. Add dates and peanut butter (and salt if using unsalted peanut butter) to the blender. Blend on medium-high speed (depending on strength of your blender) until mixture is evenly combined. You may need to prod the mixture around a few times with a wooden spoon to get everything moving.
  5. Once the mixture starts to get smooth (but not too smooth - you don't want it to become a paste - I like it with a few chunky, nutty bits), add the sour cherries to the blender. Continue to blend the mixture on medium-high speed for about 10-20 seconds, so that the cherries are roughly chopped and evenly dispersed.
  6. Scoop the mixture out the blender with a spoon and roll into truffle-sized balls. You can roll them in desiccated coconut if you'd like to make them look pretty; Just sprinkle some coconut on a chopping board or dinner plate for rolling. P
  7. Place truffles on a tray/in a container lined with baking paper and place in the fridge to firm for at least an hour. That's it!
