Ingredients
- 1 tsp coconut oil melted
- 1 egg
- 1/4 C LSA (Ground Linseed/Sunflower seeds/Almonds; Or sub with ground linseed)
- 1 tsp coconut sugar Or sweetener of choice (e.g. honey/raw sugar/rice malt; For a sugar free muffin, use a pinch of powdered stevia/1-2 drops liquid stevia instead)
- 1/2 tsp cinnamon ground
- 1/2 tsp baking powder

Instructions
- Combine wet ingredients (oil, egg and liquid sweetener if using) in a tall mug and whisk with a fork.
- Add remaining ingredients to mug and mix well, until ingredients are evenly combined.
- Microwave on high for for 1 minute.
- Turn mug upside down onto a plate; Muffin should easily slide out.
- Top with unsweetened Greek yoghurt and fresh berries and you're done! See 'Notes' for variations of this recipe.
Recipe Notes
Variations (Increase cooking time by 10-20 secs for these versions):
- Fruit: ½ a ripe banana (whole or mashed) or a handful fresh/frozen berries
- Carrot and walnut: 1 TBS grated carrot, 1 TBS raw walnuts
